Ruby’s Diner operates and franchises more than 40 casual-dining restaurants that recreate the feel of a 1940s diner. The eateries offer a variety of traditional favorites for breakfast, lunch, and dinner, including omelettes, burgers, and meatloaf. The restaurants are located mostly in California with a small number of units in Colorado, Pennsylvania, and Washington. Restaurateur Doug Cavanaugh opened the first Ruby’s in 1982 with partner Ralph Kosmides.
