Tabasco is hot. Created in 1868 by Edmund McIlhenny, the popular pepper sauce is still made at the original site by McIlhenny Company on Avery Island, Louisiana. Tabasco created the pepper-sauce industry and it remains a leader in its production and sale to this day. The sauce is distributed to foodservice clients (bars and restaurants) and food retailers in more than 160 countries. With a 600,000 bottle-a-day capacity, Tabasco is labeled in more than 20 languages and dialects. McIlhenny also co-brands with other companies to make such items as SPAM, steak sauces, Cheez-Its, peanuts, chips, and, not for the faint of heart, Tabasco lollipops. The McIlhenny family still owns and runs the company.
